The Venturo Farm has its roots in the beautiful Sillico countryside. Here, just minutes from our farmhouse, our family works daily to produce top-quality ingredients for our restaurant, direct sales, and the Bottega del Prisco in the nearby village of Pontardeto.

Ethical Breeding and Tradition

The heart of our business is raising cattle, pigs, and sheep. We are staunch opponents of intensive farming: under the expert guidance of our father Ismaele, our animals grow up in semi-wild pastures on the Sillico estate.

A choice that guarantees superior quality, authentic and animal-friendly meat, which you can taste and purchase at our direct sales point, adjacent to the restaurant.

The Excellences of Garfagnana:
Farro and Formenton Otto File

We proudly cultivate the historic varieties of our land, which have found their ideal habitat here:

  • Formenton Otto File: A special variety of corn which, after careful drying and stone grinding, becomes a precious flour for polenta and croutons with an inimitable flavour.
  • Garfagnana Farro: An ancient grain, a symbol of our rural identity.

Vineyard, Olive Grove and Orchard

Our agricultural production embraces every flavour of the territory:

  • "La Murella" Wine: From our sunny vineyard, we produce a limited and precious production, including the traditional "pistoni" of naturally sparkling sweet wine. A delight we reserve exclusively for our guests at the agriturismo and at Bottega del Prisco.
  • Extra Virgin Olive Oil and Olives: From the olives of our olive grove we produce a cold-pressed oil and classic olives in brine.
  • Artisanal Jams: In our orchard, we harvest fresh fruit to make authentic jams, cooked in a wood-fired oven according to ancient recipes, ideal for our traditional cakes and tarts.

The Cellar and the Wood-Fired Oven

The gastronomic experience is completed with our fragrant country bread, baked exclusively in a wood-fired oven, and our cellar. This is not only where we store our wines, but also where we mature our own cured meats and cheeses, guaranteeing aromas and flavors that are now rare in traditional stores.

The Soul of the Field: Ishmael

If, walking through the pastures of Sillico, you meet a man with an attentive gaze who talks to his animals, that is our father, Ismael.

Ismaele is the guardian of our family's agricultural wisdom. He oversees the semi-wild farming on a daily basis, knowing every inch of land and every need of the cattle and pigs raised here according to nature.

A curiosity:
Ismaele doesn't follow clocks, but the rhythm of the seasons and the sun. He is the master craftsman behind the masterful drying of Formenton Otto File: an expert eye that discerns the exact moment when the grain is ready for stone grinding, that magical moment that transforms a simple grain into a precious flour, laden with ancient aromas.
